Here's a recipe from my mom for some yummy vegan burger patties!
Ingredients: (Makes 4 patties)
1 large carrot, grated,
1 large red onion, finely chopped,
2 tsp ground coriander,
1 large garlic clove, crushed,
1 tbsp of chopped sundried tomatoes,
1 tbsp tomato pasata,
225g tofu, puréed in the food processor,
25g wholewheat breadcrumbs,
25g flaked almonds,
Salt & pepper to season,
Plain flour (spelt, normal wheat, whatever) for dusting,
Vegetable oil.
Heat a tablespoon of the oil in a frying pan. Sweat the carrot and onion in the pan for 3-4 minutes with the lid on until they are soft.
Add the ground coriander, garlic, sundried tomatoes and pasata. Increase the heat and cook for another 2 minutes while stirring constantly.
Stir the cooked vegetables in with the puréed tofu along with the nuts and breadcrumbs.
Season the mixture to taste and stir the mixture well until it begins to stick together.
With floured hands shape the mixture into four burger patties and fry each for 3-4 minutes on each side.
All that's left to do is decide what to eat with them! If you're a chilli enthusiast, you might like to add some chopped fresh chilli to the mix when first cooking off the onion and carrot.
